Easy Kale Salad
This salad is so easy to make, comes together in less than 5 minutes, and takes delicious. All you need is some kale, and some pantry staples. I love it on its own when I feel like I’m starving or with some fish or with meat or chicken as well to balance the salty heaviness of the protein.
Ingredients (a good portion for 2 people):
1/2 a bunch of kale (like you would get at the grocery store)
2 tablespoons olive oil
1 tablespoon vinegar -either apple cider vinegar if you’re going for something more acidic or I opted for a rose wine vinegar for a more delicate sour
salt and pepper to taste
Steps:
Super easy, just wash your kale and pull all of the leaves off of the stems and put it into a bowl. Splash in your olive oil, vinegar, and salt and pepper. Now, roll up your sleeves, its time to massage the kale. This will help the vinegar get in there and break down the fibers of the kale so it is easier to digest and softer. The softer you want the kale, the longer you will massage. I like to go for a few minutes. And voila! You are ready to serve and eat your kale!
If you’re wanting some protein on your kale, I also like to add hemp seeds, or nutritional yeast and pollen for flavor but it is totally optional.
