Lemongrass Coconut Soup
Perfect nourishing soup for the colder months with plenty of immune boosting benefits and healthy fats. Its great with protein, bok choy, or noodles, or rice added to the base depending on what you have or what you feel like. I have used my own fresh bone broth in the video and so I have left the bones with the meat on it.
Ingredients:
1 liter bone broth (recipe in pervious post) or can use store bought
1 tablespoon red curry paste
1 bunch cilantro
1 tablespoon olive oil
1 tablespoon miso paste
3 cloves garlic chopped
1 can of coconut milk
1 stick lemon grass sliced
salt and pepper to finish
sprinkle of red pepper flakes
sliced avocado as garnish
Steps:
Step 1: Heat up a large pot and add olive oil. Once the pot and oil is hot, add in the garlic until it browns slightly and then add the lemongrass. Add in the miso and red curry paste once it’s all mixed together. Sprinkle some salt and pepper over everything.
Step 2: Add in the bone broth and the coconut and stir it all together until it starts to bubble. Keep the heat on low as not to burn the bottom of the soup.
Step 3: Leave it to simmer for about 10 minutes and all of the flavors have been merged by now. At this point you can add in whatever other vegetable or cooked protein you prefer to the pot. Then add your soup to your bowls and top with a sprinkle of red pepper flakes with some cilantro and avocado slices.
