Refreshing Fennel Salad


Ingredients:

  • 2 tablespoons of whole fat yogurt

  • 1 tablespoons of water

  • sprinkle of maldon salt

  • 1 tablespoon crushed dried mint

  • 1 tablespoon dried dill

  • 1 tablespoon sweetener (I used date syrup but honey works as well)

  • 1 tablespoon red wine vinegar

  • 2 cups roughly chopped fennel

  • A squeeze of lemon juice (about 1/2 a lemon)

How To:

Step 1: To begin, chop the fennel and place in a large bowl. Then mix all of the remaining ingredients together, adding water based on the consistency you like.

Step 2: Add it all to the fennel bowl and stir together and serve!
