Mediterranean Chicken Rice Bowl
Ingredients:
Chicken:
5 organic chicken breasts
1 tsp ground black pepper
1 tsp pink Himalayan salt
1/2 cup yogurt
2 crushed garlic cloves
1 pinch crushed spicy red pepper
1 tsp crushed fennel seeds
1 tsp sumak
1/2 tbsp garam masala
1 tbsp dill
1/4 tbsp ginger powder
1/2 tbsp roasted cumin powder
1 tbsp smoked paprika
1 tbsp turmeric powder
1 tsp ground garlic powder
splash of olive oil
Yogurt Sauce:
1 1/2 cup of Greek yogurt or yogurt with at least 5% milk fat (I used 10%)
a pinch of Himalayan salt
1/2 a large cucumber chopped small
2 tbsp (or more) of cold water
Garnish (optional):
a few pomegranates seeds for a pop of juicy flavor
chopped up cilantro
a sprinkle of dill
tomatoes
spring mix
Sides (optional):
I like to serve this with some brown or black rice (recipe for rice coming soon) as well as with some naan.
Steps:
Wash and dice your chicken to bite size pieces. Mix all of the spices and herbs together in a small bowl. Add the yogurt and garlic to the spices and mix it all together with the chicken. Set aside and let the flavors soak in. This step can be made the night before to let everything marinate, but tastes great either way.
Heat up a medium sized pan with olive oil and let it get hot. Add the chicken and let them sizzle for a few minutes and turn the heat on medium. Stir them around for about 15 minutes or when the chickens are slightly browned.
In the meantime, we can make the yogurt sauce. Add the yogurt and salt to a medium sized bowl. Chop up the cucumber and add it to the yogurt mixture as well. I like to use at least 5% yogurt or Greek yogurt, as this has the best flavor, in my opinion. If you use Greek yogurt, you might not need as much water to get the consistency you like. If you use 10%, you might need more water, but it’s all based on preference.
By now, the chickens should be done. I like to put it all together in a bowl with chicken, some black rice, tomatoes, a few leaves of spring mix and some naan. Scoop the yogurt on top of everything and enjoy!
