Tuna And Brussel Sprout Patties


This week we are making a delicious and easy to make dinner for any day: tuna and Brussel sprout patties with butter potatoes and a simple salad. It’s perfect for when you want something filling and quick but also refreshing and crunchy. A colorful rainbow salad is helpful for getting all of your colors and nutritious crunch in for the day while the patties give good protein, healthy fats and essential vitamins and minerals. Enjoy!

Ingredients:

·      About 10 Brussel sprouts thinly chopped

·      3-4 cloves of garlic finely chopped

·      3 cans of tuna

·      ½ tablespoon of smoked paprika

·      1 tablespoon of dill

·      3 eggs

·      1 tablespoon hemp seeds

·      ½ cup of breadcrumbs

·      ½ lemon squeezed

·      Salt and pepper to taste

·      Tartar sauce

·      Avocado oil

 

Potatoes

·      10-15 baby butter potatoes

·      Butter or olive oil

·      Sprinkle of sea salt

 

Salad

·      Olive oil

·      1 head of butter lettuce thinly sliced

·      ½ cup of purple cabbage thinly sliced

·      1 carrot chopped

·      Sprinkle of hemp seeds

·      Handful pumpkin seeds

·      ½ can of corn

·      Sprinkle of herbs of choice: basil, oregano, dill, thyme…

·      Sprinkle of sea salt

·      A squeeze of lemon

·      1 tablespoon apple cider vinegar

Steps:

Begin by adding the potatoes to a pot with salted water and bring to a light boil for about 15 minutes or until a fork easily pierces the potatoes. Drain the water and set the potatoes aside for now (keep warm).

Add the chopped brussels sprouts, the chopped cloves of garlic, tuna, and eggs into a large bowl. Give it a good stir and add in the smoked paprika, dill, hemp seeds, and breadcrumbs. Lastly add in the lemon juice and salt and pepper. Mix it all together until it looks thoroughly combined. Heat a large pan on medium to low heat and add a drizzle of avocado oil to the pan. Start rolling the mixture into balls or patties and placing them on the pan. Flip them around when they start to lightly brown on one side. Remove from heat when they look warm brown and slightly crispy.

Begin making the salad in the meantime. Add all the ingredients together and give it a good toss until everything is coated and mixed.

Grab a large plate, add a handful of salad to the plate, as well as a couple of patties. Add a spoon of tartar on top. Slice a few potatoes and arrange them on the side with a bit of butter and sea salt. Enjoy!
