Cauliflower soup with a pop of juniper


Ingredients

  • 1 head of cauliflower

  • one small sweet onion

  • one small piece of ginger

  • 2 medium sized yellow potatoes

  • 200 grams of rainbow carrots (for color and additional nutrients-orange works as well)

  • 2 cloves of garlic

  • juice of half a lemon

  • 2 cups of broth (can use meat or vegetable and both taste great- here I used vegetable)

  • 50 ml of olive oil and more to drizzle as garnish

  • a sprinkle of smoked maldon salt for a bit of smoky flavor (regular salt works as well)

  • a sprinkle of freshly ground pepper

  • a few crushed *juniper berries as garnish (alternatively rosemary sprigs work as well)

Steps

Start by heating up a large pot. I use a cast iron for the best heat distribution and even cooking. Drizzle the olive oil into the pot and allow it to get hot. In the meantime, chop of the onion and garlic cloves and add it to the hot olive oil. It should sizzle. Stir the onions and garlic until its slightly browned and the onions are translucent.

Next, we need to add the ginger. I like to use a fine grater and grate the ginger directly into the pot, or you can chop it up super fine and add it like that as well. Now stir everything together again.

Peel and chop the potatoes and cube the cauliflower and add that to the pot as well. Peel and chop the carrots and add here too. Stir it all together until fragrant. Add the broth to the pot and let it simmer on medium to low for 20 minutes or until the potatoes and cauliflower are soft. Sprinkle salt and pepper over the bubbling soup and add the lemon juice.

Once its ready, we can take an immersion blender and blend everything right in the pot until it reaches your desired consistency. If it is still too thick, you can add a little bit more broth until you are happy with it. If you don’t have an immersion blender, you can also add the mixture to a smoothie blender and pour it back into the pot as well.

Once the soup is blended, pour into bowls and garnish with a drizzle of olive oil and crushed juniper berries.

*While they may sound mysterious and hard to find, juniper berries are easy to find online, including amazon. I got mine at World Market.
